Staff Reports (Morning News)

When trying to change your eating habits, it is important to find foods you like. When foods taste good, you are more likely to eat them. The reason diets fail is that they are too hard to maintain. Lifestyle changes, on the other hand, are gradual and can be kept up.

One food that many people enjoy is pizza. By the slice, whole pies, stuffed crust, deep dish — the possibilities are endless. The calories and carbohydrates are also seemingly endless. One hot food right now is cauliflower because of its versatility. Believe it or not, even cauliflower is getting into the pizza game.

You may have seen cauliflower used in the place of potatoes when making mashed potatoes to lower the calorie and carb content; it does the same thing with pizza. A cauliflower pizza crust slashes calories and carbs considerably compared with regular pizza crust.

Here is a recipe for a Mexican – style cauliflower crusted pizza. Feel free to use the cauliflower crust and vary ingredients based on what you like and what you’re in the mood for. The sky is the limit.

Here are some other topping options:

>> ground turkey, lean hamburger, soy crumbles or other lean meat

>> tomato sauce

>> any low fat cheese such as sharp cheddar, pepper jack or mozzarella

>> fresh veggies like spinach, onions and mushrooms,

>> pineapple

>> herbs such as dried or fresh parsley and basil.
