Angeled Eggs!

We’ve all been there.

You are trying to eat healthier, but not everyone around you is on board. Parties, family gatherings and holidays are great for catching up with friends and relatives but not always so great for our healthy lifestyle journey.

One tip for handling those “I just/I only” moments at parties when we know we’ll be hard pressed to find something to put on your plate: bring a healthy dish with you . That way, you’ll know there will be at least one thing you can eat.

Deviled eggs are a time-honored tradition for family gatherings, especially in the South. However, they are also very high in calories. With just a few quick changes to the recipe, you can turn them from devils to angels.

Traditional recipes call for approximately 1/4 cup of mayonnaise per dozen eggs. With this recipe re-do, you’ll be replacing some of the mayo and egg yolks with other creamy options to cut the fat and calories without losing the flavor.

Angel Eggs

Ingredients:

  • 12 large eggs (Tip: Older eggs work better)
  • 2 tablespoons plain 2% reduced-fat Greek yogurt
  • 1 tablespoons canola mayonnaise
  • 1 tablespoon low-fat cottage cheese
  • 1 teaspoons Dijon mustard
  • 1 teaspoon yellow Mustard
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon kosher salt

Preparation:

  1. Add cool water to a large saucepan to a depth of 1 inch. Place eggs in saucepan. Bring water to a boil over medium-high heat. Remove saucepan from heat and cover. Let stand for 10 minutes. Drain water and place eggs in ice water. Peel when cool to the touch.
  2. Combine yogurt, mayonnaise, cottage cheese, mustard, pepper and salt in a medium bowl, stirring well to combine.
  3. Peel eggs; discard shells. Slice eggs in half lengthwise. Add 6 yolks to yogurt mixture. Mash with a fork until very smooth. Stir in 2 tablespoons red onion. Spoon mixture into egg white halves (about 1 tablespoon in each half).
  4. Garnish as desired. There are many seasoning options, such as paprika, green onions and garlic powder.

Get creative:

As anyone who loves this food knows, the devil is in the detail! So spice it up and get creative!

For quick pickled onions (lower calories than store bought!), mix 1/4 cup water, 1/4 cup cider vinegar and 1 tablespoon sugar, then microwave for 2 minutes. Add in finely chopped red onion and let sit for 15 minutes. Adds a beautiful color and garnish to your angel eggs!

Substitute cottage cheese for avocado and garnish with green onion and hot sauce for a healthy, Spanish flair.
