Love your white rice?  Get in line.  But as we continue to change our eating habits, we want to find replacements for the less healthy items that we love.  For  a healthy substitute to white rice, try this recipe suggested by BIGGEST LOSER contestant Windy Sitton!

Put raw cauliflower, walnuts, and a little olive oil in food processor.  Pretty simple, huh?  It comes out crunchy and rice like!

  • 1 head cauliflower
  • minced garlic
  • lowfat milk
  • margarine
  • salt and pepper

Cut up cauliflower and boil in pot until soft. Drain water, mash cooked cauliflower with potato masher.  Add margarine & garlic to taste.  Add milk and mash until desired consistency.  Add salt and pepper to taste.

*You control the “healthiness” of this recipe.  Remember, a small amount of healthy margarine or butter for a whole head of cauliflower is appropriate.
